This a family favorite meatless Monday recipe.
Each quesadilla:
2 8-inch whole wheat tortillas
3/4 cup roasted sweet potato (see below)
1/2 cup canned black beans, rinsed
2 T finely chopped green onion
2/3 cup shredded CoJack cheese
To roast the sweet potatoes:
2 lbs sweet potatoes, peeled and cut into 3/4 inch chunks
2 T oil (we use canola)
1 t brown sugar
1/2 t ground cinnamon
1/2 t ground cumin
Toss together, spread them single-layer on a baking sheet and bake at 400F for about 30 minutes.
