Roasted Chicken Caprese

You know those funny little recipe books at the end of the aisle at the grocery store?  They have some of the best recipes.    The one I’m going to share with you is very slightly modified from one of those books.  It’s super simple and one of my all time favorite summer recipes to make – especially with fresh basil from the farmers market.

To start, you’re going to want to marinate some chicken.

Put 4 chicken breasts in a freezer bag.  Whisk together the juice from 1 lemon, 1/4 cup olive oil, 1/2 t. salt and 1/2 t. ground pepper and pour that over the chicken. Let it sit in the fridge for at least 30 minutes.  I typically do it the morning I’m going to make it so it can soak it in all day.

A little over an hour before dinner time you are going to want to roast your tomatoes.  Take 6-8 Roma tomatoes and slice them lengthwise into quarters.  Mix them in a large bowl with 1/4 c. olive oil, 1 t. kosher salt, and 1/2 t. sugar.  Lay them out on a roasting pan so they aren’t touching.

Roast those at 375° for 30 minutes.  They’ll come out looking like that amazing after picture and smell divine.  While you are roasting them – you’ll want to put together the rest of the “caprese” part of the meal.

Take one bunch basil and shred it up. And cube up 8oz of fresh mozzerella.

Doesn’t that look good?  Now you just wait – once those yummy delicious tomatoes are done you are going to add them over the top and that mozz is going to get all tasty gooey good.

Now set that aside and take the chicken out of the bag (discard the marinade) – put it on the same pan that you roasted the tomatoes on.  Cook that at 350° for 30 minutes turning once.

Once that is done plate one chicken breast with a good helping of the caprese salad and enjoy it.

Home Sweet (This) Home

I’ve moved a lot in my (almost) 35 years.  This house is one of over twenty places that I’ve called home at one point or another.

 And I fell in love with it.  Instantly.  Until we moved into it.

Then, I missed my little old house.  With floors that creaked at every step and cupboard doors that fell off their hinges when you opened them too quickly.  I never thought I’d miss it.  But I did.  We had painted every room, utilized every space and created our life there.  It was our first home as a complete little family unit.  The old woodwork and brick fireplace etched itself on my heart in a way I didn’t expect while I was adding up the cost of every single home repair we had to make.
I hated this space. It had rooms I didn’t have furniture to fill – didn’t even know how to fill and it felt so new{ish}.  No lead paint or asbestos to worry about but no battered 8″ moldings or cut glass windows either.  I missed the charm.   I loved having the space to put my belongs but hated not being able to hear my son when he was playing on the opposite side of the house.
I was terrified that I would never like living in this house – a house I told my husband I adored.
And then this weekend that all changed.  The weather warmed up.  We opened the windows.  Puttered in the yard.  I reviewed a list of ongoing projects and tackled a few of them.  I rearranged the plans for how each room is going to be used.  I started to see what I wanted my house to look like in a few years.  And it started to feel like my home.
I love that I can hear spring peepers when our windows are open.  I love that from 3:30-8pm.  I can hear kids running around and riding bikes and playing basketball outside.  I love that I don’t have to share one tiny bathroom with the whole house every morning.  I love that it took me a little over six months (and some hand me down and thrifted finds) to find my vision, but that I did find my vision.

Now to call the electrician so I can tackle a couple of those projects!

A Few Random Things


Just a picture of my kiddos almost four years ago now.  Sigh.

 We are having pork chops for dinner.  With apples.  And mashed root veggies.  I feel very 1950’s wife right now.

After yesterday’s sunny skies, the clouds today are making me feel very sleepy and chilled.

Not having sugar is hard – but it’s only 24 hours so I can do it.

I had a nice long chat with my Gram this morning.  She’s one of my favorite people.

I’ve been in a reading mood lately.  The last book I read was NOT my favorite.  Suggestions?

The new season of Mad Men is disappointing me but I’ve been watching How I Met Your Mother on Netflix and I love it.

I’ve been working with a physical therapist and a trainer to strengthen/stretch my hips so I can get back to running.  They are very sore in a good way.  I miss running longer distances.

But yesterday I walked almost five miles in Toms without them bugging me so maybe I can start running again.  (I left dinner with my husband in a huff.  Sometimes  I am a real drama queen. Also, we are fine, I’m just crabby)

I’m going to get the laundry folded before I go pick up A from preschool.  We are going to play trains and cars and have a nice long snuggle after lunch.
